Instructions :

1• In a medium-size bowl, combine chopped arugula, minced chives, 4 egg whites and half of the greek yogurt (4 Tbsp). Add 2 Tbsp of water and mix together until smooth. Stir in oat bran and wheat bran.
2• Heat a large non-stick pan over low heat. Drop scattered tablespoons of batter in hot pan and spread slightly to make small pancakes. Keep warm and repeat process with remaining batter.
3• In a bowl, mix together 4 previously beaten eggs and remaining greek yogurt (4 Tbsp)
4• Cook this mixture on low heat in a different non-stick pan, stirring it with a spatula until you obtain scrambled eggs.
5• Lightly salt and add pepper to taste. 6• Arrange the little pancakes on a serving plate, place scrambled eggs on each, and top with slices of smoked salmon before serving.
